
Just Like Heaven Healthy Donuts That Finally Are A True Meal!

Who doesn’t love donuts?
At home we always have space for a sweet treat, and donuts are some of our favorite foods. I always wanted to craft a healthy donut as a meal, no guilt, and pure healthy indulgence. I think THIS IS IT!

Servings: 7-8 donuts
Gluten-Free / Toddler-Friendly
Ingredients For The Dough
Wet Ingredients
- 4.5 oz in weight of a yam (about half a yam)
- 3.5 oz in weight of carrots
- 2 eggs
- 4 Tbsp melted oil (coconut, ghee, or butter)
- 2 Tbsp maple syrup (or use monk fruit for lower glycemic diets)
- 1 tsp vanilla extract
- Sufficient coconut oil for lining the donut tray

Dry Ingredients
- 1/4 Cup raw cacao powder
- 1/4 Cup coconut sugar (or use monk fruit for lower glycemic diets)
- 2 Tbsp coconut or cassava flour
- 2 Tbsp arrowroot flour
- 1/4 tsp pink salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda

Dough Instructions
- Gather all your ingredients. Clean and weigh the carrot and yam.
- Pulse the carrot and yam in your Food Processor until small pieces, finely grated.
- Add to the processor all your dry ingredients and pulse until well incorporated, see photo below for this step.
- Pre-heat your oven to 350 Fahrenheit. Line your donut tray with ample oil. I prefer coconut oil for this.
- Toss in your wet ingredients and pulse until everything blends well.
- Pour your batter to each donut setting to the mid or 3/4 mark so that the donuts have space to rise.
- Place in the oven and set your timer for 30-40 minutes. My donut trays are on the thinner side so I placed the donut trays over a baking tray. My oven is electric and mid size counter top (picture of it is in the Landscape YouTube video in the last slides of my son eating the donuts, if you wish to get an idea for comparison). 30 minutes was my perfect baking temperature. Other ovens are larger and faster, so work with your oven’s capacity to bake. Also the size of your donut tray has an impact- the smaller the donut fillings, the faster your donuts will cook. You can always check your donuts by inserting a toothpick, and if it comes out clean, then your donuts are ready. You can also sacrifice one donut as the test- my favorite method for testing. These are like molten lava cake donuts so they are moist. For the future, make a note of your ideal baking time. To be safe do a test at more or less at the 30 minutes mark to see if they’re done.
- Take the donuts out, let them rest for 5-10 minutes so the ingredients settle in. I know this is hard to do because they are irresistible, but let them cool on a rack.
- Use this time to make your frosting.

Ingredients For The Frosting
- 3/4 Cup unsweetened chocolate chips or 4.2 oz
- 1 Tbsp maple syrup (substitute with monk fruit for lower glycemic diets)
- 1/2 tsp vanilla or flavor of choice
- 3 Tbsp hardened coconut oil or 0.8 oz
- 1/8 tsp pink salt

Frosting Instructions
- Melt all ingredients on a sauce pan over low heat and stir often.
- Sample and adjust to your liking.
- Drizzle over the donuts or dip the donuts.
- Close your eyes, fall in love, share with others!

Notes & Variations
- Try other flavors, mix ‘n match ingredients according to your liking, experiment, get wild!
- Try ripe figs, black berries, chocolate extract, cacao butter, butter, strawberries.
- To thicken any sauce you can use arrowroot flour but do this when the sauce is lukewarm- arrowroot doesn’t thicken well in hot temperatures. You can also thicken by putting the mix in the fridge or freezer for a little bit since many oils harden in cooler temperatures.

Health Benefits
Raw cacao is high in antioxidants, may reduce depression, is low in sugar, and is high in fiber and iron. Cacao may also help in lowering blood pressure and cardiovascular disease. Yams are high in fiber and minerals like potassium, and they are also helpful to pregnant women and relieve menopause and PMS symptoms. Yams aid digestion, reduce blood sugar, and are anti-inflammatory. Carrots purify the blood, are rich in anti-oxidants and Vitamin A, reduce diabetes, improve sperm quality, help digestion, and enhance the immune system and cholesterol. Basically, these donuts are the bomb!

Footnotes
~ Make your own baking powder: In a small jar, shake vigorously 1 tsp cream of tartar with 1/2 tsp baking soda and 1/2 tsp arrowroot powder. Now you have 2 tsp of baking powder for use.
~ Try Monk fruit. It’s is low glycemic, no calories, and perfect for sugar mindfulness and sweet substitutions. I use it sometimes to sweeten, and it tastes better than stevia, to me. You can use your own ratios of monk fruit with coconut sugar, honey, or maple syrup. Taste as you go, and you will find your heaven. I recommend getting PURE monk fruit from Now, not mixed with other processed sweeteners.
